Inspired by the "paleo" diet, the AIP diet is as varied as it is delicious. It is a healthy diet based on unprocessed basic ingredients. It consists first of eliminating potentially inflammatory foods and adding foods that protect the intestinal walls.
What foods are prioritized in AIP?
Fruits and vegetables (except the nightshade family)
Fish and seafood
Meat and organs
Good fats (oils, and animal fats)
Honey and maple syrup
Lactofermented or probiotic foods
Coconut products (flour, cream, oil, etc.)

Foods to Avoid During the Elimination Phase

Dairy products
Cereals, grains and legumes
Refined sugars and processed products
Vegetable oils
Nuts and seeds
Alcohol and coffee
Solenaceae family: pepper, chili pepper, eggplant, potato (except sweet potato), tomato
How to start the AIP protocol
It is recommended to fully understand the protocol and to be accompanied by a certified and competent person before changing your eating habits.
The AIP food protocol takes place on
several weeks:
First, there is a period of substitutions/elimination of certain food groups. In this phase, we often see positive changes in digestive symptoms.
The second step is maintaining a diet that follows the recommendations of the protocol. This is a key step in which we also come to establish healthy lifestyle habits that are sustainable and significant for health.
The last step involves gradually reintroducing certain foods that potentially trigger symptoms but can now be better digested.
